If you've tried roasting decaf and thought "something's off," you're not imagining it. Decaf beans are physically and chemically different from regular coffee, and they need a different approach.
v7.0 added full decaf support to RoastSource — the app now detects decaf and adjusts profiles, scoring, and guidance automatically. But here's the background on why it matters and what to watch for.
Why Decaf Roasts Differently
The decaffeination process (EA, CO2, Swiss Water, Mountain Water, sugarcane) alters the bean's cell structure and reduces moisture content. This means:
- They heat faster. Lower moisture = less thermal mass. The drying phase is shorter.
- They scorch easily. The altered cell walls are more fragile. High charge temps that work fine for regular coffee can burn decaf surfaces.
- First crack is muted or silent. This is the big one. With regular coffee, you listen for crack to know where you are. With decaf, the crack can be so quiet you miss it entirely — or it may not happen at all.
- Color lies. Decaf beans look darker than they taste at any given development point. If you drop based on visual color, you'll consistently underdevelop.
How to Adjust
Lower your charge temp — Drop 10–15°F below your normal starting point. This compensates for the faster heating and reduces scorching risk.
Go by time and temperature, not sound. Since first crack is unreliable, use your timer and (if you have one) bean temperature as your primary guides. RoastSource's milestone-based approach works well here — the app adjusts expected FC timing for decaf and warns you that crack may be muted.
Don't trust your eyes. The beans will look darker than they are. Use weight loss as your objective measure of roast development. RoastSource's decaf-adjusted weight loss bands account for this.
Be gentle with heat. A declining but moderate RoR curve works better than aggressive early heat. Think "low and slow" relative to your normal approach — not drastically different, just gentler.

- Profile generates with a cooler charge temp and gentler heat curve
- In-roast guidance warns about muted crack and color-vs-development mismatch
- Expected weight loss bands adjust downward
- Quality scoring doesn't penalize the muted crack or color mismatch that's inherent to decaf
- Flavor predictions account for the different flavor development
Recommended Starting Point
Pick a washed Colombian or Brazilian decaf (Swiss Water or EA process). These are the most forgiving decaf beans to roast — consistent moisture, predictable behavior. Aim for a medium roast. Once you're comfortable, try lighter or darker, or move to a natural process decaf where things get more interesting.
